Join Dexterra Group as a Second Cook and contribute to the success of the Culinary team in a remote camp setting in Nunavut. Prepare starch and vegetable items for the dinner menu, ensuring quality standards are met. Collaborate with the First Cook on menu preparation and production. Responsibilities include assisting with all menu items, following recipes and portion controls, replenishing stations, maintaining kitchen cleanliness, and practicing safe food handling. This role offers a 4-week on/2-week off rotation with all meals, accommodations, and travel from Edmonton Airport provided. The position requires a current Food Safe certification and the ability to handle physical demands.

Requirements

  • Current Food Safe certification is required
  • Ability to commit to a 4 week on/2 week off rotation
  • A team-player who is committed to providing client satisfaction
  • Must have valid government issued photo ID for travel to site
  • Ability to handle the following physical demands: Lift, carry, push or pull up to 50 lbs
  • Climb ladders or stairs
  • Stand, walk, squat, kneel or sit according to task for extended periods of time
  • Perform repetitive hand work requiring full use of both hands
  • Perform work with arms at full length
  • Work with arms above shoulder height

Responsibilities

  • Meet daily with the First Cook to discuss menu preparation and production strategy
  • Assist the First Cook in the preparation of all menu items as needed
  • Follow recipes, portion controls, and presentation specifications
  • Can be responsible for preparing and serving hot breakfast
  • Replenish desserts and condiment stations as required
  • Assist in the cleanliness and maintenance of the kitchen and serving areas
  • Can be responsible for assisting with baking
  • Practice correct food handling guidelines and storage procedures

Preferred Qualifications

Large-scale cooking in camp settings, banquet halls and/or hotels is a strong asset
