Summary

Join Dexterra Group as a Second Cook and contribute to the success of our culinary team in a remote camp setting in Nunavut. You will be responsible for preparing starch and vegetable items for the dinner menu, ensuring quality standards are met, and assisting the First Cook with various tasks. Requirements

  • Current Food Safe certification is required
  • Ability to commit to a 4 week on/2 week off rotation
  • Must have valid government issued photo ID for travel to site
  • Ability to handle the following physical demands: Lift, carry, push or pull up to 50 lbs
  • Climb ladders or stairs
  • Stand, walk, squat, kneel or sit according to task for extended periods of time
  • Perform repetitive hand work requiring full use of both hands
  • Perform work with arms at full length
  • Work with arms above shoulder height

Responsibilities

  • Meet daily with the First Cook to discuss menu preparation and production strategy
  • Assist the First Cook in the preparation of all menu items as needed
  • Follow recipes, portion controls, and presentation specifications
  • Can be responsible for preparing and serving hot breakfast
  • Replenish desserts and condiment stations as required
  • Assist in the cleanliness and maintenance of the kitchen and serving areas
  • Can be responsible for assisting with baking
  • Practice correct food handling guidelines and storage procedures

Preferred Qualifications

  • Large-scale cooking in camp settings, banquet halls and/or hotels is a strong asset
  • A team-player who is committed to providing client satisfaction
